Choux and Brew

Welcome to Choux and Brew, a Café Patisserie established in December 2022 by a pair of cousins with a drive for business and pastry! Our aim is to offer Glasgow with a patisserie of freshly made desserts, namely freshly baked and filled Choux pastry! Alongside, of course, other delicious delicacies and "Brews" from proud Scottish Tea and Coffee suppliers.

Choux - recognise the name but don't quite know what it is? Chances are, you have tried it at some point. Choux pastry is made of eggs, milk, butter and flour and has a distinctive characteristic when baked. It puffs up, leaving an empty cavity which then gets filled with creams or mousses to make what we all know as Eclairs and Profiteroles, etc.

Now that we have introduced our company, here is a bit about us...

Michael Law

Hi, I’m Michael with a background in accountancy and finance. I am a qualified CIMA management accountant since 2019 with a keen interest in sports, food and travel. It has always been an ambition of mine to manage my own business and to grow and develop my own brand.

With the faith I have in Wendy's skills as well as her passion, it was the ideal opportunity to take the big step. The partnership with my cousin was fitting with our synergies... Plus I get to test and eat the cakes - so it really was a no-brainer!

So from managing the business and finances in the background, and pouring coffees day-to-day, I look forward to greeting you all with your favourite type of brew!

Wendy Lo

Hi guys! This is Wendy, the pastry chef of our Café Patisserie. I started an HND in Professional Cookery in 2015, where I was trained by amazing lecturers and got to compete in many pastry competitions, travelling the UK, Europe and even USA! I feel lucky to have worked with and learned from many skilled chefs within Glasgow, Edinburgh and London. From small cafes, to large hotels, to Michelin starred Restaurants, I can bravely say I have experience in many sectors of the industry.

However, one thing I had yet to try is my own business, and so here we are. Alongside the brains of my cousin, I am able to offer my creations to my home city.
